My birthday is on March 22nd. This year I celebrated my 25th birthday. Wow! It was an amazing day with parties, friends, fun, and lots of drinks.

During my party, one of my friends reminisced about a funny story related to my childhood days and then told me that she had a surprise for me. She told a story about my cravings for pineapple cakes. Back then, there was an older lady that lived next door to us and she was a fantastic cook and an even better baker. Once I smelled a pineapple cake that she made and couldn’t resist asking her for a piece. I loved her cake so much that I always asked her to make it for me.

Finally after hearing me ask her to make the cake a few hundred times, she suggested that anytime I crave the cake I should wear a yellow dress, and then she would make the cake for me on those days. From that day I used to wear a yellow dress every day! My friend remembered my childish foolishness and thought to bring me something reminiscent of those days on this birthday.

She explained its recipe to all of us, here are the pineapple cake ingredients that she used to make this cake,

1 can (20 ounces) crushed pineapple, undrained, divided
1/2 cup vegetable shortening
1 cup butter or margarine (2 sticks)
2 cups granulated sugar
6 large eggs
3 cups sifted all-purpose flour
1 teaspoon baking powder
1/4 cup milk
1 teaspoon vanilla extract
1/4 cup butter or margarine
1 1/2 cups confectioners' sugar

To prepare, drain the pineapple juice in a small bowl and set aside. In a separate bowl, using a hand mixer cream together the shortening, butter and sugar. Then add eggs one at a time while continuing to beat. In another bowl, sift flour and baking powder together; slowly add flour mixture to the creamed mixture. Add 1 large spoonful at a time of the milk as you add the flour mixture to the creamed mixture. Once all the flour and milk is added to the cream mixture, add in the vanilla. Stir continuously with ¾ cup of the reserved pineapple juice and blend well.

Fold in the crushed pineapple into the mixture and pour it to prepared baking pan and put into the oven to bake at 350. Let the cake bake for at least 1 ½ hours. Take from oven, let it cool and decorate it.
