Unforgettable Birthday Cake

I like to share my first experience with baking a birthday cake for the first time. During my first year of marriage, on my husband's first birthday I thought to surprise him and make my first birthday cake. A simple and easy cake that I remembered watching my Mom make was using dates. This was perfect since my husband and I are both vegetarians and the recipe is egg less. I would imagine that this would work well for anyone searching for a vegan cake as well.
The ingredients are
20 Dates(seedless)
1 cup flour
1-cup milk
3/4 cup sugar
1 tspn baking soda
1/2 cup vegetable oil
1 Tbsp cashews
1 Tbsp walnuts

1.soak the dates in milk for 30 minutes(seedless)
Note - If you cannot find seedless dates. remove the seeds from the dates and soak the dates in warm milk overnight
2.Add sugar & grind them in to smooth paste along with the milk in which it is soaked in.Add oil&mix
3.sieve together flour&baking soda
4.Add the flour 1 table spoon at a time &mix slowly
5.Add the nuts & mix
6.Preheat the oven at 350F
7.Bake the cake in greased oven proof dish for 35-40 min

Everyone including my mother-in-law was impressed with my birthday date cake. My husband was so impressed that in front of the entire family he presented me with a golden ring on HIS birthday for making this cake.
